As some of you might remember…in the years before my life involved bridal satin, digital images, or detailed wedding timelines…

 

I spent nearly 30 years as a student at The Culinary Institute of America, as a chef, and as the owner of a restaurant/ catering business…

 

I love food, more importantly I LOVE MEAT… my restaurant while featuring American Regional Cuisine – featured MEAT…

 

So Back in September, after returning from vacation, when “C’ announces that he has finally decided to become a vegetarian (?); my eyes got as big a thick slice of prime rib!

 

This announcement really came as no surprise to me as I understood that we both have issues with the steroids in non-organic meat, and how most commercially raised meat is processed …

 

To our friends who know “C” as the – “ Let’s go to the all you can eat prime rib night!” guy- they were a bit perplexed.

 

So after trying and developing a taste for all of the vegetables he had refused to eat most of his life, and the slow weekly elimination of first red meat, than pork, than chicken and fish, and lastly giving up our favorite turkey…”C’ officially went vegetarian.

 

Now, we have developed a ‘house rule’ – I can eat whatever I want- just don’t ask him to buy, it or cook it.

 

And I just ask that we can do all the whole veggies, grains, and even tofu treats he wants…just don’t ask me to eat  ‘fake meat’ – I like veggie burgers… just don’t see the point in taking perfectly good tofu, grains or vegetables and trying to make them look like something you are giving up…

 

We’ve actually come up with a pretty decent compromise – when we cook at home we do – healthy, whole grain, whole vegetable meals…

 

“C” can add in his “ vegetarian chicken” after I get my share…and I can eat my share of real meat outside of the house…

 

So I just like everything else in life…it’s about compromise..
